It's a wonder Soulard went without for so long. A neighborhood that melds hoosier livin' with real estate regentrification goes perfectly with a slab of ribs, a side of slaw and an ice-cold frosty one. Former real estate man and Arkansas transplant Toney Goucher's shack might not be for St. Louis barbecue purists (he smokes hot and fast -- six hours at 275 to 325 degrees -- and favors baby back ribs). But goshdarnit, barbecue's barbecue, and Soulard was overdue.
